Kıymayı da ekleyip suyunu çekene kadar pişirin. Kıyılmış maydanoz, kekik, nane, karabiber, kimyon ve tuz ilave edin. Ateşten indirin soğusun. &lt;/li&gt;&lt;li&gt; -2 su bardağı unu, su ve zeytinyağ ile sert (açılacak kadar yumuşak) hamur yapın, üzerine nemli bez örtüp 5-10 dakika dinlendirin. &lt;/li&gt;&lt;li&gt; -Akşamdan ıslatılmış nohutları pişirip kabuklarını ayıklayın. &lt;/li&gt;&lt;li&gt; -Dinlenen hamuru 30 cm çapında 1-2 cm kalınlığında yufka açın. Ufak kalıpla (tuz kapağını veya çay bardağını kalıp olarak kullanabilirsiniz) kesin.&lt;/li&gt;&lt;li&gt; - İçine hazırladığınız içten çay kaşığı ile kesilen yuvarlak hamurun yarı yüzüne koyun diğer yarısını üstüne kapatın. Biraz uzatarak iki ucunu üst üste getirin.&lt;/li&gt;&lt;li&gt; - Yarım kg yoğurt, un ve yumurtayı çırpın. Tencereye koyup devamlı karıştırarak orta ateşte 5-7 dakika pişirin. Sonra etsuyunu ilave edin. Karıştırmaya devam edin,&lt;/li&gt;&lt;li&gt; - Kaynayınca içine pirinci ve nohutu atın. Ara sıra karıştırarak pirinçler pişince içine yaptığınız hamuru atın, &lt;/li&gt;&lt;li&gt; -Pişene kadar ara sıra karıştırmaya devam edin. Hamur suyun üstüne çıkıp rengi değişince pişmiş demektir. &lt;/li&gt;&lt;li&gt; -Servis tabağına alınca üzerine bir çorba kaşığı tereyağında kızarttığınız kırmızı biberi koyun. Bana sorarsanız, Antakya’da yediğim tavuğum hatırlanacak en önemli tarafı nar gibi kızarmış olan çıtır çıtır yağlı derisinin muhteşem tadıydı. Antakya mutfağı zenginliği, baharat ve ot çeşitliliği ve yemeklerin renkli görünümüyle Güneydoğu Anadolu mutfağına benzer ama kendine has tarafları da çoktur. Biz Gümüşhane’de yaşarken komşumuz Mebrure Hanım’ın Antakyalı bir gelini vardı ve mutfaklarından zahter denilen bir çeşit dağ kekiği, nar ekşisi, sirki denilen kurutulmuş çökelek, biber salçası, yenibahar ve kimyon eksik olmazdı. Mebrure Hanım, özellikle, bulgurlu, bol baharatlı, cevizli soğuk mezeler, mercimek köftesi, batırık ya da kısır gibi mercimekli yemeklerin yanı sıra nefis dolmalar yapar ve neyse ki yaptığı yemeklerden bize de sık sık yedirirdi. Antakya mutfağını Mebrure Hanım sayesinde kokladığımı söyleyebilirim. Ekmek içini ve kıymayı bir kaba aktarıp karıştırın. Üzerine kuru soğanı rendeleyip 1 çay kaşığı tuz ve karabiber serptikten sonra en az 5 dakika kadar yoğurun. Köfte harcından küçük parçalar koparıp yassı köfteler hazırlayın ve köfteleri yağsız tavada önlü arkalı pişirin. Taze patatesleri soyup dilimleyin. Biberleri halka halka, mantarı da küçük küçük doğrayın. Patatesleri tereyağı kızdırdığınız bir tavada, tavanın kapağı kapalı vaziyette kızartıp alın. Mantarı, kırmızı ve yeşil biberleri tavada kalan yağa aktarıp mantar suyunu bırakıp tekrar çekinceye kadar kavurun. Suyunu çekince, 1 çay kaşığı tuz ekleyip karıştırdıktan sonra pembeleşinceye kadar kavurmaya devam edin. Domatesleri tavla zarı formunda doğrayıp mantarın üzerine ilave ettikten sonra 10 dakika daha pişirin. Domatesli mantarı servis tabağına aktarıp kızarttığınız köfteleri üzerine yerleştirin. Pirinci yıkayıp süzün ve tenceredeki sosa ilave edin. 3 su bardağı kaynar suyu da ekleyip tuz serpin. Kısık ateşte, pilav suyunu çekinceye kadar pişirin. Üzerine 1 çorba kaşığı biber salçası, 1adet rendelenmiş soğan ve 1 tatlı kaşığı kimyonu ekleyin. ara sıra su ekliyerek 5-10 dakika kadar yoğurun.&lt;br /&gt;Sonra azar azar ve sürekli yoğurarak irmiği ilave edin. İrmiği iyice yedirdikten sonra unu ve yumurtaları ilave edin. Malzemeler özleşene dek tekrar 5-10 dakika yoğurun. (iyice ve en az 10-15 dakika yogurmazsaniz köfteler suda dagilabilir) Bulgurlu harçtan misket iriliğinde yuvarlakar hazırlayın,  bu yuvarlakların üzerine parmağınızın ucunu iyice bastırın. Derin bir çukur oluşturun.Tüm malzemeyi bu şekilde hazırlayın.&lt;br /&gt;Malzemeyi pişirecek kadar suyu tencereye alın.1 adet limonun suyu ve yeterince tuz ilave edin. Su kaynadıktan sonra bulgurlu köfteleri suya atın. 10 dakika kadar kaynatin, köfteler suyun yüzüne çıkasaya kadar. Hasladiginiz köfteleri bir kevgir ile tencereden alip  suyunu süzün.&lt;br /&gt;Bu arada sos için tavaya 4 çorba kaşığı zeytinyağını alın. Rendelenmiş domatesleri ve 4 çorba kaşığı domates salçasını ilave edin. Koyulaşmaya başladığında dövülmüş sarmısakları ve yeterince tuzu ilave edin, Köfteleri ekleyin ve bir taşım kaynatıp ocaktan alın&lt;br /&gt;Servis tabağına alin, maydonoz ile süsleyip &lt;span style="font-family:Georgia,Arial,Helvetica,sans-serif;"&gt;sıcak olarak&lt;/span&gt; Bol su ile yıkanır. Daha sonra suyun altında tersi çevrilir. (Bunların ucu musluğa takılarak tazyikli su ile rahatça çevrilmesi sağlanır) Çevrilen mumbarlar nar ekşisi ile ovularak yıkanır. Bumbarlar nar ekşisi içinde bir gece dinlendirilir. Ertesi gün tekrar yıkanarak çevrilir. Diğer taraftan pirinç ayıklanıp yıkanır. Soğan ince doğranarak karabiber,tuz ile ovulup kıyma ile birlikte pirince ilave edilir. Bağırsağın ağzı içe doğru kıvrılır, avuç içine alınır malzeme doldurulmaya başlanır. Bu durumda bağırsağın yağlı kısmı içe, yağsız kısmı dışa kayar. Doldurma işlemi bittikten sonra iplikle sıkıca bağlanır. Tekrar yıkanır ve ve bumbarın üstünü kapatacak kadar su ilave edilip ateşe konur. Bumbarın piştiğini anlamak iççin çatalın ucuyla deneme yapılır. Çatal bumbara kolaylıkla giriyorsa pişmiş demektir.
